Oil change - do you remove oil pan?

No. Not dropping a perfectly leak free pan without a good reason. Maybe if I got a deal on a sludged motor. But otherwise, no.
 
The longer the time your sump screen (pick up) is not submerged in oil, the greater the chance you have of an oil pump losing prime. Assuming you are quick doing a pan R&R and cleaning, that's at least an hour the pick up tube is slowly dripping oil out of the pump. You can easily do more damage to your engine engaging in such a ritual.

In 2011 we had oil pans ...
9 years later you would think we would have a sealed system by now.
