Preheat oven 350℉
Grease a 9"x 5" metal or glass bread pan
2 c. A.P. (All Purpose) flour
1 t. Baking Soda
1/4 t. Salt
> Combine in a large mixing bowl.
1/2 c. Butter (I cook with unsalted butter)
3/4 c. Brown sugar
> Cream these together
2 Eggs beaten
2 1/3 c. (2.33 c.) Mashed Bananas NOTE: It took 5 medium sized bananas to make 2.33 cups.
>mix these 4 ingredients
Options: 1/3 c. dried cranberries and/or 1/3 c. chopped walnuts to the above 4 ingredients. I add both.
Mix wet into dry
60-65 minutes. Glass pan takes ~5 minutes longer.
I use wood skewers to test for doneness.
Remove from pan 5 minutes after baking and cool on a wire rack.
I use the oven's lower rack.
The loaf is dark, moist and sweet.
Eat as is, toasted or reheated in a frying pan with a whisper of butter.
