Non-stick pan

America's Test Kitchen has a video on YouTube comparing Teflon non-stick to ceramic non-stick.

I think the winner was Oxo (Teflon non-stick)
 
I researched omelette pans and the French use polished aluminum pans for this purpose. I don't have an aluminum pans so polished one of my stainless steel pans and it is indeed non stick now.
 
Got induction stovetop to provide even heat to the stainless pan and all is good now. Eggs cook perfectly and do not stick.
 
I just picked up a new blemished 13-1/4" Lodge skillet while in Tennessee. Washed out the new pan and smother fried some chicken. Did not stick! With the matching lid it's quite a handful.

I bet you will. Most of my cooking is in cast iron.

Same here. And, on my electric stove.
 
Another vote for cast iron. I use it almost exclusively. It goes from the stovetop to the oven, and I also use it on the grill.
