Only difference between HTST and UHT milk is spoilage bacteria and a little taste difference. The lack of spoilage bacteria is what allows the UHT milk to be shelf stable.
The reason why the organic stuff is UHT is because of cost - regular non-organic milk is currently around $2 or less a gallon when organic milk is $5-6. Not too many people want to pay triple the price of regular milk and still go bad in 2 weeks.
