Provolone Cheese

I agree smoked provolone "leoparded" under a broiler on any pasta is great! I was wondering what happened at Mr. Gatti's, a small family owned to-go only pizza place where I grew up used smoked provolone until the original owners retired.

LOL I remember when I first moved to St. Louis I ordered pizza at some place in the Central West End. They brought it and I took one bite and couldn't eat it. I called the guy over and told him his cheese must be rotten. He gave me that look of pity reserved for the uneducated masses who live just beyond the Central West End. I didn't care, I told him he could take it back whether he charged me for it or not.
That provel is FOUL !! Now, maybe the best pizza I ever had also came from there, a place called "Pi". Just outstanding and no dang provel !
