Hey thanks for taking the time to analyze my problem!

Well yes there's a bearing cap but there's no active seal/gasket. Its just a metal cap that I hammer into the bearing hole.

The milky grease I was talkinga bout was just some excess grease squeezed outside of the bearing cap (exposed to the elements directly).

There could have been salt water that entered the bearing cap because I didn't use wheel covers during the winter - plus I think the grease either thinned out or the grease was just too old on the shelf... I didnt mix the grease with anything, it was fresh grease at the time. but i did note that the grease was rather "solid" in the can rather than that sticky "semi-fluid" state you'd see in fresh grease.
