A few week update on this:
Almost 1,000 miles later and the coolant has not dropped a single ounce, also the oil color and level have not changed in the slightest. It looks like I just changed it yesterday.
The "only" thing I can think of is this: the engine was running extra rich to try and cool its self down, and that in turn turned the oil pitch black and full of fuel, and that in turn made the oil burn off because of the higher temperatures of the incorrect coolant ratio and fuel dilution of the oil?
Either way I am not complaining, and I would say this problem is solved.
