Raise your hand if you often use a pressure cooker. I poo-poo'ed Instant Pot electric pressure cookers in preference to my old Mirror brand stove top model, but my wife's bought one several years ago and I found myself using it all the time.

Soups, stew, hard boiled eggs, steaming, rice, beans plus a ton more. And it doesn't heat the house up.
 
I don't but the wife does. She went from using a pressure cooker to an instant pot after many, many years. She loves it.
 
My wife loves hers.
I hardly bother with it. Even though it can be used as a slow cooker, I prefer the old Crock Pot for that task.
 
I do not have one either. I prefer a dutch cast iron pot for cooking roasts etc. Anything soaked in a lot of water seems to have all the flavor boiled out of it.

The aromatics definitely exit when venting, but even with a natural release, just not the same as more conventional/slow cook.

I'm not denigrating the InstantPot. We have one, don't hate it, just our observations.

Frozen stuff to cooked, pretty good!

The line up on the counter is the Insta pot, a dry fryer and my bread machine. Had some pressure cooked beans last night.
 
I love our instant pot. Less time and less mess. Is anything coming out of it a culinary masterpiece - of course not. But I don't have time for that.

Take a pile of veggies and some chicken and I can make a stew or curry in minutes (plus the 20 minute cook time).

I can make a pretty decent meatloaf also. Is it as good as an oven one - no. But it takes 20 minutes.

Would be nice to have all day to sit around and cook - but don't have that. Instant pot is awesome. Healthy tasty food pretty quick.
 
I use mine quite often. Best use for me is making stock and broth, and I use it for beans, as well. That said, I sometimes make those items on the stove top or in the oven in my Le Creuset enameled cast iron Dutch oven. Depends on my mood, time available, and the result I'm looking for.

I've also used it to make a few variations of beef stews, although I'll just as often use the Le Creuset, mostly in the oven.

I'm very pleased with the Instant Pot and very glad that bought it. Of course, I love my Le Creuset pots, too. They have more charm than the Instant Pot but, like the IP, they do their job very well.
 
I use mine weekly for pinto or black beans. A couple years ago, I modified my split pea soup recipe to take advantage of the instant pot, now it’s 10 mins to prep the ham bone and 20 mins to cook the peas, and I can sauté the mirepoix in the same pot. I used to make carnitas in the instant pot too but I’ve switched to the oven now I’ve found a decent source of Manteca.
 
I recently used ours to make a 10 pound shoulder roast for pulled pork. I let it cook for about 20 hours on the slow cooker setting in pineapple juice to get the texture I wanted.

I also cooked down about 6 quarts of apples to make apple butter. I pressure cooked the apples first, them pureed them with a stick blender and then cooked them down with spices for most of a day uncovered on the slow cooker setting.
