PVC is a no-no because not if, but when it fails, it will burst into shards like glass and really hurt somebody. I did 3/4 copper in my woodworking shop for ease of installation and 3/4 for the extra air volume and flow for multiple tools. Put moisture drops with ball valves in several locations.
Iron pipe works only if you like to chase leaks whenever a cast fitting gets too porous, or the threaded fittings decide to leak. The more you have the more leaks you'll have.
My copper system is so tight that if I turn the compressor off and go on vacation, it's still got full pressure 2 weeks later.
