What Oil Do You Use For Frying?

French fries today fried in corn oil. Very good. Had a slightly buttery taste...

Wanted to try something different besides vegetable oil which is prolly soybean oil if you are in America.

When the wife cooks she frys! I myself prefer baked foods with slightly heated olive oil splashed on the dish as it comes out of the oven be it breaded chicken or french fires...
 
We typically use Smart Balance or sunflower oil if I can find it. But we don't deep fry anything.. just a little bit at the bottom of the pan to prevent sticking.

Hmmm...gives me an idea...

Pop some corn in bacon grease and then add bits of bacon to it.

Bacon popcorn? Sounds like the second coming!

I use either grapeseed or olive oil,both are around the same price (I get them on special,whichever one is lowest),and only about a $1 more than the cheap oils.
 
Back when we fried french fries (maybe once a year), peanut oil with a block of beef dripping in it...fish and chips once a week for a couple of weeks, then nothing deep fried for the rest of the year (no reason really).

These days, crumbed lamb cutlets are 50%50 EVOO and butter, and are the closest to frying.

Wedges of potato sprayed with olive oil and baked.

Baked spuds in whatever fat drips from the roast meat.
 
Deep Fry (french fries, catfish or green tomatoes): corn or canola oil.

Saute: olive oil or olive oil mixed with butter.

Ghee? I've never heard of it...sounds good though but the wife is vegan but I still might try it...
