Old car, long trip, risk assessment please.

if it can do 800 miles local, 800 on highway is a breeze. make sure cooling system is top..i.e. radiator, hoses, thermostat, radiator cap.

Find a trust-worthy independant mechanic,tell him your story, and pay him $100-$200 for a thorough inspection, watching for failure-prone items.
That would be the most cost-effective way of addressing your concerns. Auto club membership (I guess it would be "AAA" down in the United States?) and a cell phone are must-haves as well.
BTW, statistics show that cooling system failures are the most common reason for older, "beater" cars being stranded on the side of the highway.
 
Do not do any maintenance before a trip unless its a simple oil change or tires, ever. If any errors were made, it would be unpleasant to find out during the trip.

Good point.
If it's running and driving right before the trip, leave it alone.
800 miles is really nothing.
