Homemade Poké

Made some ahi poké yesterday. Paid $21/lb for some top grade sashimi grade tuna. I must say, it's absolutely awesome. I watched the girls make it in Hawaii.

For 1# of fish (most of this is to taste):

sashimi grade ahi in about 1 cm cubes
1/2 teaspoon of red Hawaiian salt
1/4-1/2 teaspoons on red pepper flakes
very small diced SWEET onion
chopped green onion
~1 teaspoon of sesame oil (I like untoasted, some like toasted)
~2 teaspoons of shoyu

Chuck it all together, allow to marinate in the 'fridge.

Enjoy!!

Made some myself but added Opihi(limpet), ogo(limu) and some grated ginger. Alaea Sea Salt(Red) from Hawaiian Specialty Salt..just right good quality.

The Opihi gives an added rich flavor only Hawaiian grown as they are found nowhere else on the planet. The Limpet grown in Alaska, Mexico and Okinawa are bland...how they got here on the Islands and mutated is a mystery.

My Hawaiian wife mentioned it needed some limu, or nori but I think it detracts a bit, well just to throw some cut seasoned nori in didn't seem right. Some people sprinkle furikake in.

Some grated ginger would be good next time.

What I don't get is the red pepper flakes - it tastes good and right, but that's not even close to native Hawaii food.

Yeah I bought two sacks of Alaea Sea Salt.

I'll have to try Opihi poké next visit.
 
The Hawaiian pepper is similar to the hot peppers from Southeast Asia not quite as hot as fiery hot but keeps it's heat longer and has good flavor. The Hawaiian chili pepper is far more ideal for poke or chili pepper water, I like using Thai peppers for stir fry.

Wasabe, Kim Chee, Limu, Shoyu, Oyster Sauce and Furikake poke, there are many different recipes.

The basic:

sashimi grade ahi in about 1 cm cubes
1/2 teaspoon of red Hawaiian salt
1/4-1/2 teaspoons on red pepper flakes

chopped green onion
~1 teaspoon of sesame oil (I like untoasted, some like toasted)
~2 teaspoons of shoyu

is something like that...always will do the trick. I usually add chopped Opihi during the holiday seasons for an extra richness and flavor.
