Made some ahi poké yesterday. Paid $21/lb for some top grade sashimi grade tuna. I must say, it's absolutely awesome. I watched the girls make it in Hawaii.
For 1# of fish (most of this is to taste):
sashimi grade ahi in about 1 cm cubes
1/2 teaspoon of red Hawaiian salt
1/4-1/2 teaspoons on red pepper flakes
very small diced SWEET onion
chopped green onion
~1 teaspoon of sesame oil (I like untoasted, some like toasted)
~2 teaspoons of shoyu
Chuck it all together, allow to marinate in the 'fridge.
