It depends on the vehicle. After using 5w-20 to stay in warranty in my 2006 Honda Odyssey, I then switched to 5w-30. That immediately quietened the engines sound. My wife easily noticed it too. Conversely, I have tried different weights (including monogrades) in my older Chevy truck (4.3L V6) and there was no change at all.

My 08 Jeep Wrangler with the 3.8L V6 called for 5W-20. That is what I ran the first couple of oil changes. One hot summer day while exploring the Nevada High Desert I noticed the engine was kinda noisy. Next oil change I used a synthetic 5w-30. I ran that weight for a lot of years. I didn't notice any change in how the engine ran or gas mileage but it was quieter. I also felt better when hauling my trailer. Not long before my LS engine swap I ran Mobil 1 0W-40 trying to slow down oil consumption. I did that a little but I still noticed no difference in how it ran or mileage.
