What do you guys do when you replace a system and have a bunch of the old filters leftover?

I just replaced my 1973 Carrier furnace and have 11 un-used filters left. 16x25x1.

Thrift store. They usually have a section for automotive. If they are high quality, and you can use the cash put them on Kijiji.

I use the same size, but I typically use the 3m Filtrete 1500 filters. If they are a high end filter they might be worth it to somebody else on eBay, or Craigslist. One of my systems uses the exact same filter- they are a popular size.
