Local city owned parking garages had signs with the hours of operation that read:
Monday
Tuesday
Wednesday
Thursday
Friday
Saturday
Sunday’s

Very nice! Some years ago I worked as a specification writer. After I'd moved on, I sent my successor (good guy, we played hockey together) a short note written in the same style as yours. I must have crammed at least a dozen grammatical and spelling errors into it. Anyway, he was much less OCD than me about these things, and phoned me to tell me that he'd found an error in my note!

To paraphrase the great Dave Barry (a.k.a. Mr Language Person), "The apostrophe is used at near the end of words to warn the reader that an s is coming up". It's certainly true here. LOL
