Also - what oci should I plan on - fairly normal/ easy driving. Will not be doing black stone samples

Wait, is your Porsche diesel or gas?

I like the castrol edge 0-40 because it's easy to get and is $23 for 5 qts

The Mobil 5-30 esp seems to only be available in qts and is at least 2x the cost

I get it's a Porsche and so why to save any money but at the same time why throw it away if I don't have too

I'll think I'll plan on using the 0w-40 edge at 7500 intervals

Yes, you will throw away money. Check Amazon for deals on Castrol Edge 0W30. I got 6qt for $38. Now it goes 6qt for $61. That oil IMO is better than 0W40. They are very similar though.
 
For the first change under your ownership I would just keep with the manufacturer's recommendations whether it's under warranty or not.

I have a 2008 Cayenne 6 speed with the same engine with 160k miles. I disregarded the C30 recommendation and have used an A40 oil with 10k change intervals (Mobil 1 0w-40, but probably Castrol 0w-40 next change since Amazon has been shipping it for $22 for a 5 quart jug). I have not done a UOA, but at 160k miles, I still burn no oil between changes.

I should note that if I was less lazy, I would have no problem using a C30 oil, but with M1 or Castrol 0w-40, I only have to keep one oil for all my vehicles.

FWIW as of around March 2019 Mobil ESP X1 0W30 has been replaced by M1 ESP 0W30.
