I need some advice! I left a bottle of liquid polish/wax in my wife's car. She didn't see and flopped the back row of seats down and loaded some heavy items. This causes the product to spill and leak out onto the carpet and leather/pleather seat surfaces. Any ideas the best way to start cleaning this stuff up?

I think you will do fine with a spray bottle of all purpose cleaner, like Royal Purple, a 4:1 ration, and as may clean microfibers as you can get your hands on. Beyond that, maybe an extractor machine filled with hot water, if necessary. Liquid wax/polish is not a particularly tough spill imho.

Aerosol glass cleaner in a steel can, a blowgun and a towel to blow it into.

My son let some skimboard wax melt into the seat of a rental car. I cleaned it with ether starting spray, but I got high as heck, and it could have exploded. It stunk for about 2 days, but did melt the wax right out.
