I have a 2010 Camry. Should I use BG Power Steering Fluid every 30k and let them honor a protection plan on it or save money and take a chance with Amsoil ATF?

Not sure what you mean by take a chance, but ATF is specified.

Well BG offers a protection plan for up to $4k in repairs if I use their power steering fluid and do it every 30k. It costs me $35 for the service.

Says to use Dexron 3 but BG pays any repairs for life as long as I do it every 30k

I would stick to a good synthetic ATF like Amsoil.
I have turkey bastered my PS reservoir a few times and refilled with Mobil 1 ATF (in my Corolla) and I expect a lifetime of trouble-free service. My s-i-l has 215K on a Corolla which has had only 2 or 3 TB changes using dino ATF. Toyota PS systems aren't troublesome to my knowledge and they do call for Dexron ATF.

Yep, there is always a gottcha with those limited warranties.

Use a quality ATF and do drain/refills with a Turkey baster every 30k.
