making horseradish

i have been looking at this patch of horseradish root growing in the corner of my garden for about 25 years now. i think it is time to give it a try. anyone here make their own? looks pretty simple. i do like it HOT. looks like it is pretty much vinegar and root ground up. any secret ingredients?
 
I used to make horseradish and it is HOT. Wear gloves and eye protection. We ground it as fine as we could with a hand gringer and the used a blender for some to smooth it out. I think all we used was water.
 
Horseradish Sauce:
Makes about 2 cups

The cream in this sauce is meant to be thickened only, not fully whipped.
Ingredients

1cup heavy cream , chilled
2inch piece fresh horseradish root , grated, or 2 tablespoons prepared horseradish, or to taste
2teaspoons lemon juice
1/4cup minced fresh chives

Instructions

Beat cream in deep bowl with handheld mixer at medium speed until thick but not yet able to hold soft peaks, about 11/2 minutes. Whisk in remaining ingredients until just combined. (Can be covered and refrigerated up to 2 hours; whisk briefly just before serving).

We use a lot of horseradish (being polish!) and the best method for fresh horseradish is grinding it finely with a grater, add a little sugar and white vinegar to prevent browning.

All you need!
 
thanks everyone. looks like i will be sweating this weekend. in a good way. by the way, how much beer does it take to do all this?
 
None! Take it like a man!

For Easter, we make a soup called Borscht. It is essentially a horseradish, vinegar and meat broth soup thickened lightly with flour/egg. You then insert eggs, bread, sausage, ham, etc... And makes the most delicious soup EVER.

Thing is, we need to shred a ton of horseraddish. Two or three roots. By the time your done, you are red in the face and tears running down your cheek.

I had my cousin smell the bowl of fresh ground root. He fell to the ground in pain. My brother then tasted the finished product and he nearly choked. Pungent stuff if you get a good root.

well it came out great. used two roots and added vinegar. it was a sinus auger. i have to sneak up on it after i take the lid off. made some salsa and made some homemade smoked bacon. man what a week.
