I just picked up a Cub Cadet 3240 with a 22HP Kohler Command to use primarily to push snow. However, I want to use an oil that also be good in the summer should I choose to mow with it. It calls for 10W-30 or 10W-40 above 32* and 5w30 or 5W-40 below 32*. I'm thinking a full synthetic 5W-40 would be good year round...something like Rotella T6 5W-40. What are your thoughts?

If it fits, use it. Use the XP version next time. Synth media is all that recommend and use.
On a few of my tractors, had to run the +1 oversized 3614 because the 3600 size hit engine covers, and is why to always check or tape measure for clearance.
If it fits, the 51516xp, XG3600, or PBL20195 are the higher capacity +2 oversized filters.

The PH8a was too wide for any of my small engines. If it fits, you'll have a secondary sump with the filter size, should prefill as much as possible without spillage, and increase oil amount to reach proper level. If it fits, take a picture of it installed. I use the PH8a sized filters on Toyota's 4.7 V8 and its plenty of filter/cooling/capacity for a 22hp Kohler.

I did minor surgery on my John Deere to allow the larger 3600 size filter (Fram).
I looks a little rough but the ragged edge is normally covered by the cowl.

Does it have power steering?
I know back when I had my 2544 and Z-Force 44", they would start and run in freezing temps no problem with 15w40. Like said, 5w40 is probably the best of both worlds. Nothing wrong with 10w30 either of course. I just did some hot and heavy mowing with mine at times which is why I liked the heavier stuff.
if it's stored in your garage I'd use a synthetic 10W30. I put Super Tech Full Synthetic High Mileage 10W30 in my LT150 with a Kohler but it doesn't see winter...

Awesome! Those machines were like $7K new with an attachment or two. You don't see too many of them. Nice heavy-duty transaxles on them too. I used to run Rotella-T 15w40 and napa or carquest premium hydraulic filters on my 2544.
It will be in a barn with no heat, so will be started in below freezing temps.
I had to remove and trim a cylinder shroud, but the 51515XP fits nicely now. I filled it with 5W-40 T6.
