How do you store bacon grease for cooking

I keep a small amount in closed glass jar in fridge for use when I want it for making gravy and existing fried sausage, bacon, or country ham doesn't make enough grease. Had sausage and milk gravy this morn for late breakfast. Good for your heart but at 79 I've stopped worrying about it.

At your age it's probably not going to be easy to get a replacement heart should you need one. Unless the rest of you is pretty much shot, why not try to keep the one you've got going a couple more decades? If nothing else it's a good excuse to have a glass of wine with your sausage.

At his age, I'd probably have the same philosophy he does, if I even make it that long.

I think at some point enjoying the quality of life is worth something more than just extending it. It's a fine line and varies by individual, but honestly if I hit 79 and I want to eat bacon for breakfast, it's happening.
 
I store mine in the fridge, in an actual metal coffee tin. One of the one-pound sized tins.

It's mandatory to use in green beans, and is good to cook eggs in when there's no bacon that day. Also, it's good to grease the pan for cornbread.

I used some yesterday, making fried squash and onions. The clan loved it, including 2yr old grandson. His word of the day is currently NO, but he said yes to Grandpa's cooking.
 
We cook bacon in the oven most often (place on foil covered baking sheet and collect the grease) and store the grease in a jar in the fridge.
 
We keep ours in the fridge, stored in a large soup can.

On the general subject of bacon -- We recently discovered that cooking bacon in the oven, on a cast iron pizza pan is absolutely amazing. It results in perfectly cooked bacon without the mess, while seasoning the pan in the process.

When you're done cooking the bacon, you can then "oven fry" sunny side up eggs on the same pan.
 
I keep it in the fridge, and you can get nitrate nitrite free bacon, costs a bit more but well worth it.

Free range it, and the omega ratios make it pretty darn healthy.

Nitrates are prescribed for heart health...and Nitrogen oxides are an essential part of heart metabolism.

Not that I'm prescribing bacon injections for anyone on the board, but bacon, and a little saved fat to cook/add flavour isn't ending anyone's BITOG experience in any great hurry.
 
While bacon grease might be considered a health food, it's also a good lube for frying potatos and onions, or eggs.
It does lend a nice flavor to bland foods.
I'd store it in the refigerator.
 
I use wide mouth pint mason jars with the plastic lids. Keep it in the fridge. Easy to scoop a spoonful here and there.
