Help me pick 1 of 3 oils for my 800hp E63s (overwhelmed)

Choosing among those 3, I woud go with M1. It must have the best base oil among those 3 with an additive pack at least as good as the others.
PUP is great and that is like my current favorite, but it is usually on the lower end of the grade in terms of viscosity, even though compared to 0w40 it is not much (like 0.5 if memory serves me correct, 13.3 vs 13.8). I run it on multiple vehicles, but in your case, you have a beast! I would opt to get the best protection without worrying about efficiency.
But this being said, you did an absolutely good job. It is like splitting hair at this point. All three are top notch. I don`t think you would really see a difference during your ownership of vehicle that will be a result of which one of these 3 you will end up choosing.

I am with @kschachn on this one. As a general rule of thumb, i believe it is a good idea to consider a higher HTHS if you are pushing the engine beyond its intended levels, either with boost/mods or stock but with usage (track driving).
It is not to say that you should increase the grade by 20 just because you installed an axle back giving you 10 more hp, but I think you are talking about roughly 40%-50% more horse power than what the car is designed for? I would give it increasing the grade a considerable thought, and you don`t need to overthink which oil to use at that point.
