Real easy to mask it off just like that.

Mask it off and then back at 400 degrees? That Moroso pan in done that way to save money ob paint

You take off the masking materials...then bake @ 400 degrees!

Moroso isn't known for selling low rent parts, if it were some cheap Chicom junk i would tend to agree. IMO they do it that way to prevent possible engine damage reasons or possibly both.

The VW pan is exposed enough that there is a factory pan guard for it as well as a couple of aftermarket skid plates (if they still make them).
