One of my car's tires is hard to inflate. I've tried 2 different compressors. The issue is that the chuck doesn't press the valve nipple far enough. Is there any trick to get around this?

This. It only costs a couple dollars for a new core and valve core removal/installation tool which is just a screwdriver with a funny slotted head on it.
I think you'll probably find a new core won't help, but a new stem would. Replacing the stem means you pretty much have to take the wheel off the car. An alternative solution that might work would be to grab a sander and make the stem just a little bit shorter.
If you have those little chrome sleeves over the valve stem you may find they interfere with your chuck. Remove the sleeve or use a different chuck.
You can replace the valve stem without removing the tire. You will have to remove the wheel, break the bead, press it down and prop it open with a block of wood, reach in and cut off the stem, remove and replace with a new one.
