My PTU's vent is plugged and the OEM oil has turned to sludge. What is the recommended replacement fluid? I was thinking of Mobil 1 75W-140.

I would use the motorcraft fluid.
75w140
It seems that those are quite common to fail
(you dont list the year)

The m1 would probably be fine.

Although this is not an answer to your question, I'll throw it in anyway.

I had a 2007 MKZ AWD That kept leaking fluid from the PTU. Took it to three different dealers to fix, but always started leaking again.. Last dealer changed all the fluid and although it seems to fix the problem, and even though the car was still under warranty, I just did not want to deal with it any more, plus my wife could not trust it. Traded it off after one week and before it could start to leak again.

I'll stick to FWD (or RWD) from now on.. No more AWD..

After the PTU in my Mariner went bad with less than 50k miles on it, I replaced the dealer installed fluid with Red Line 75w-140. It has been 10,000+ miles now and all is well. I bought a 5 gallon bucket so I can change it often. My new PTU doesn't have a drain plug, so I suck it out through the fill hole after the PTU is warmed up.
