I bought a snapper pro s200xt 61" zero turn mower what grease would you use on the spindles that hold the blades it has upper and lower grease fitings

Any multipurpose grease would work fine for that. I would grease it every other month.
Unless there is something specific in the manual, a NLGI #2, GC-LB rated lithium complex grease. 3% Moly additive is a plus. Valvoline Palladium has worked well for me, but there are other brands that work fine too. Should be good for all grease points.

I'm guilty of using Coastal multipurpose grease on my Great Dane. Seems to work fine.
Multipurpose lithium grease is good... frequency is the ticket.
Be glad you have serviceable spindles, I looked at many mowers that did not.
