Other than those special tuned race car, in general,

what should the proper oil temperature be?
what should the proper coolant temperature be?
what should the proper automatic transmission fluid temperature be?

Thank you very much.

Engine oil should spend a lot of time over 190F to drive out moisture. Ideally it should stay under 230-235F the big majority of the time for long oil life.

Coolant temp depends on what the car was designed for. Generally 190F to 210F. Higher is OK if the car was designed for it.

Auto trans fluid should be cooler than engine oil for long life. About 175F is good. Anything higher reduces oil life and transmission life. Some sources say that every 20F increase in tran fluid temp above 175F cuts fluid life in 1/2.
