Beet greens. This something new?

It's sold in a plastic clam shell package and I tried it a month ago. Been nearly the only salad greens I bought since. Don't think I ever heard about or seen it before. Did they just come out with it and any other uses for it?
 
Beet greens are the best part of the plant. Also there is Swiss chard which is a beet developed for its greens. They've been around ever since beets.

I like grabbing the small fresh beets at the farm market.

Boil the bulbs cook bacon throw the diced bulbs and greens together and fry.

Then choose 1

1. Hot bacon mustard dressing
2. Apple cider vinegar
3. A simple seasoning

Beet greens like turnip greens are delicious when served with the bulbs.

Was hard this last year finding them with fresh green tips due to the odd weather

The leftover cooking water from the bulbs works as a health drink with my morning smoothie

The Italian nonna way to prepare.

Boil the beets, at least 1/2 hour or until tender.
Peel the beets cut into bite size slices.
Parboil the greens for 2 minutes.

Put all into bowl. Toss with salad oil, vinegar, a touch of sugar, salt and pepper.
Goes well as a side dish to pork.
