I recently inherited a very low mileage 2018 Ford Edge AWD with the 3.5 V6 engine. The first oil change was done at the local Ford dealer.

The invoice listed 5W-20 Motorcraft oil and a Motorcraft filter. I have a stash of 0W-20 of QS, RGT, M1 AP and Valvoline ME from the last AZ oil purge. I change my own oil and I drive conservatively. No towing with this vehicle.

The owner's manual states that 0W-20 can be used when below zero temps are anticipated. It never gets anywhere near that cold here.

I haven't owned a Ford for >20 years.

What should I use?

I'd use the 0w20 that you have....they are all fine full synthetics. 0w20 protects the same as 5w20 but flows a bit better at startup in very cold weather.
Is the 3.5 a turbo (Ecoboost)?

If they think 5W-20 is good for that 3.5, 0W should be GTG! Once you move into EB territory, things get interesting.

My 2018 Taurus is running RGT 0w20 and in my manual it's just listed as an alternative for colder climates. Same engine as yours and it runs great on it.
