Is there any objective, recent documentation for the majority PAO claims on the M1?
I just bought 12 quarts of their esp 5W30 and think it's probably 90+% group lll.

MSDS for the last several years has shown M1 0w20 EP & AP are 70% PAO.

No, the terms low-SAPS (SA ≤ 0.5%) and mid-SAPS (SA ≤ 0.8%) are often used incorrectly in the industry. C3 is a mid-SAPS category, and the SA for C3 is between 0.6% and 0,8%. Otherwise, it would have to be C4 (low-SAPS, SA ≤ 0.5%) or both C3 and C4 at the same time. However, according to the PDS, it isn't. Therefore, it's mid-SAPS, with 0.6% ≤ SA ≤ 0.8%.

The M1 AFE 0W-20 is currently half-PAO-based (with some AN) and the M1 EP 0W-20 is currently fully PAO-based (with some AN). For GDI/TGDI engines, go with the M1 EP 0W-20, not with the M1 AFE 0W-20, because the former (EP) has not only a higher-quality base oil but also a higher antioxidant content (for extended performance (longer oil life)), both of which are necessary for reducing the IVD.

The M1 AP 0W-20 is very similar to the M1 EP 0W-20 and possibly even a better choice, but it's a lot more expensive.

So would that be considered then a low amount for a mid-SAPS oil?

Valvoline 0w20 noak is 11%, the 5w20 is 7.6

How about the 5W30 ESP?

Both Valvolines have unknowns, as-does the 5w30 Ultra Platinum I'm currently using.
I will await the SP GF6 / Gen 3 oils coming out, before purchasing any more oils.
