Smoker Time

i snagged a Pit Boss pellet smoker on clearance at the local china-mart wal-mart. Not that i know how to use it well but its good for finishing a Sous Vide cook.
 
Have a food grade 55 gal smoker made by a local that sells them on the web, have had some good smokes but i'm still a novice and still learning.

We are having our Christmas dinner on Monday Dec. 16th. My apt. manager wants me to smoke an 8 lb. ham, a few racks of ribs, and 2 whole chickens. Not a problem. I'm using Cherry wood.
