Oil on the dash?

Maybe coconut oil might work - - - but plain veggie oil or olive oil will get REALLY gummy/sticky in just a few weeks.

Yeah, I don't want my dashboard cooking in the Texas heat with vegetable covering it. I can only imagine how bad that would smell.

In summer you could probably fry the bacon on the dash, huge time saver.
 
I took some bad advice years ago and "conditioned" my leather (fake) work boots with vegetable oil. It turned rancid and began to smell so bad I had to toss them. Don't use anything natural that can spoil. It's nasty, trust me.

Having worked with natural lubes for cast bullets, I concur with the posts above: rancidity, bad smells and offgassing in hot weather/film on window glass. Curiously, given the bacon grease comment, pure lard is the best of the worst, but still not good enough to be recommended.
 
I used WD-40 to clean up the vinyl on the back of the seats in my 96 Nissan pickup ...and they looked so good that I ended up using a light coat on all of the interior vinyl / plastic... sort of just to see what it'd do ... that was over a year ago and all of it still looks new. I didn't think it would hurt anything but didn't think it would last too long either... but it has ! I just wipe the dust off the dash as needed with a slightly damp cloth... no more than before. Even though it's a daily driver, it stays in the carport a lot of the time, so it's not out in the sun all day unless on a day long trip... even so, after more than a year, I'm impressed.

It will shine it up so that the sun will reflect off and glare on the windshield making driving more difficult.
