BBQ pork ribs

I had lunch at the Holy Smokes Country BBQ last week in Santa Cruz, CA. BBQ pork ribs, homestyle cole slaw and broccoli crunch. It was excellent.

Whew, that looks really good!!
My limit is about two ribs.
I prefer pulled pork with coleslaw and pickles on top.
Sauce on the side.
That's some good eats!

I ate half of what you see on the plate and took the leftovers home. There's no way I can stop after two ribs.

Pretty much with any "chain" - - - there will be a number of compromises, some of them pretty important
 
Rudy's is getting to be a chain … but so far ours is doing good smoking … of course you have to get the "moist" brisket which is a PC way to describe fatty with black bark

When working in Amarillo , there used to be a small place run by an older Black man and woman that made pretty good Bar-B-Que .

Not much for ribs , but I liked the sandwich , pinto beans and what ever other side came with it .

Go into a Bar-B-Que place and it is operated by a bunch of teenagers , walk back out .

Any way , do not know if he just closed or moves . Some other food place , now .

Dyers Bar-B-Que is not bad , but more up class and higher prices .
 
Well … they are not teens … but 2nd generations at both of our oldest bbq joints have taken them backwards …

One of them is so dry you have to bathe all meat in sauce …
One good thing is they kept the sauce recipe going …
 
Good BBQ is a true art......chain restaurant bbq is for the folks who just don't or never had real bbq
If you stop a place for bbq and you don't see or smell smoke
LEAVE !!!

And you should see the hard wood stacked outside right as you smell it burning.
I tried several iterations of easy cooking machines - back on the wood pit again.

I love cooking bbq and it's only cooked with real wood
Slow and easy
In georgia I use a lot of pecan wood mixed with hickory and oak
Makes a sweet mellow taste to the meat
