I have two 3.5 Ecoboosts in the garage. I know the 5w-30 semi syn Magnatec produces some great results, but now that the bottle says full synthetic, has that changed?

Interesting question. I have used both and I have to say, I liked the semi-syn better. Seemed smoother and quieter with the Semi-Syn( original 5w-30 Magnatec)

What makes it likely to be the reason?

Magnatec became full syn long before SN plus, besides, there are many Conventional oils that meet SN Plus.

Not so around here. Full Syn SN Plus replaced the semi SN here.
Also, please tell any major stores around here selling conventional to get SN Plus in five quart jugs. Only ones I've seen is Supertech conventional in SN Plus.

Your area and my area are what.... 1100 miles apart? Could be the difference you and I are witnessing.

The Synthetic Magnatec was SN for some time before everyone, including Castrol. went to SN Plus.

Castrol GTX Ultraclean 5w20, 5w30
Valvoline "Conventional" 5w20, 5w30
Mobil 5000 5w30, 5w30
and others.

^All in the same Walmart where you find that ST. All are SN Plus. It may not show in the donut in your area yet but lookup their TDS online. You'll find it there if not on the jugs.

Even Pennzoil "Conventional" 5w20, 5w30 meet it but the Pennzoil site doesn't show it yet. You have to visit the epc.shell.com website.

I only judge the oil specs by the jugs in the store. I would never assume otherwise. I would never buy otherwise.
If there's SN Plus oil in the jug that says SN, I won't purchase it. If the manufacturer allows the use of older verbage jugs that contain new verbage oils, that's their business.

GTX Ultraclean
Valvoline Daily Protection
Pennzoil Conventional

All show it on the jugs here, hopefully your area will as well soon.
