Plumbing drain question

I'm working on shortly removing my kitchen countertops for replacement. I will be disconnecting the plumbing myself but having a plumber come in for the reconnects when the new countertops are in.

I noticed on our island vegetable sink drain, the p-trap appears to connect to two downward pvc pipes. Looking in the basement, both downward pvc pipes then connect to a single pvc pipe that also services other sinks. My other sink p-traps only connect to a single pvc pipe whereas the island sink connects to two pipes. I would like to know why the difference, what is the purpose of the double connection for the island sink?

I don't think its right either. Its close, but i was under in impression that the loop needs to be almost touching the bottom of the counter-top.
 
Not ideal but it would work. I would have more of an issue with the glued trap. That would be a pain if it ever clogged or got something down in it.
