About 2 hours in right now, getting hungry and I still have hours to go yet

BC, I'm having the exact same meal, along with a couple of baked potatoes! I have about 2 hours to go on mine.

Really does look good. PERFECT Sunday dinner.

First thing I noticed is that the ribs aren't too fatty.
It's my biggest complaint with meat. A brisket or ribs can be so good or so revolting. Same goes for "Prime Rib".

Enjoy!

Not sure how you like your ribs, I've found that steaming them before slow cooking on the BBQ works well.

In the oven in a pan, with a rack, water under the rack and ribs on top, and a lemon or two in the water. Cover with foil and bake 45 mins 350degF

Now that I have a multicooker (like an Instant Pot, but it's a Breville) I do the same thing, except it only takes 20 minutes. Then either cook on the BBQ or store in the freezer (I use a vacuum sealer).
