ham and bean soup

I do ham hocks and beans, any kind, split peas too! I only add salt after they are finished cooking, salt slows down the softening of boiling beans. Always salt when they are finished.

I get really good big meaty ham hocks from a local butcher in the area, part of the perks of being in an area that has a lot of livestock ranchers.

I do like ham and pea soup, but ham and bean definitely has a more robust flavor.
