Careful, they still can. Find out how Cryolite (aluminofluorides- aka -dementia in a bottle) ends up on grapes especially white ones, for example. Fun fact: Dogs are not actually poisoned by grape raisins, but the Cryolite used on them and the massive concentration-increase (per unit mass) that results from dehydration of the fruit.

He-ey, but it is gluten free!

The USDA Organic program maintains a list of allowed substances here. There are pesticides, although they’re mostly of natural origin. That doesn’t mean more or less healthy or safe. In some cases (copper sulfate comes to mind) Organic pesticides are more toxic than their modern counterparts.

In short, farmers are using older technology when breeding, fertilizing, and maintaining crops. The USDA has this program which helps them market to a niche audience. If paying the premium for the label makes you feel better, have at it.

I prefer to avoid buzzwords that don’t convey a health benefit.
