Agreed Seafoam could have increased the overall volatility of the oil allowing for more losses due to evaporation over the run.

Apparently people don't read here. So....you went from 1 to now 2 quart usage over 7500 miles...all in one change time frame. What I would do is go back to your original oil and change it...do NOTHING else. Run it and monitor usage. That way you can zero in on if it is due to the change in oil. If it still is disappearing, then move on to the next best guess, probably pcv.
