Coyote + Track Time - Oil Choices

I recognize it's tamer. Part of my concern is that this engine does run hotter on oil, normally. 230F is a pretty common oil temp when commuting around town with zero aggressiveness. There's also some nuances to the oil temp calculation algorithm where ac on/off makes some big differences in oil temps, even at highway speeds.
My opinion is unchanged. There is no issue here on 30 grade for track cross.

My BMW ran around town 230-250 before I installed oil cooler. I was pushing 300f on track before oil cooler.
If you are concerned, dilute coolant with more distilled water and run heat at full blast at highest setting.
 
What I really want is an actual temp sensor. I've been looking at ways to add one, so I can stop guessing/questioning things.

I bet there is some aftermarket stuff. Did you check Mustang forums? Ask that question?
I agree. On track, regardless what event it is, you want oil temperature information.
But, in the meantime, I don’t think you have any issues. To @TiGeo point, he runs power dense engine on track without issues. I have same engine in Tiguan and it is oven under the hood.
Unless you are at high altitude, I wouldn’t worry and just kept having fun.
