When I did this job on my 2004 I just completely removed the front axle and let the cv shafts hang but I did tie them up so they weren’t hanging.

Those style seals spin inside themselves so the axle shaft shouldn’t have any wear. The OE gasket is farpak fiber, they seal really well when installed properly. GM doesn’t make a metal/rubber one for the 4l60e. Lubelocker gaskets work great, they are very thin though.
