I would not think of it being a thermostat problem since the gauge flucuates too quickly. I'm thinking temp sensor which I think is mounted right on the manifold.

I have run both Champion Truck plugs and Bosch Supers and notice no difference. Mileage is the same as well. I even run an Accel Super Coil with plugs gapped to .040
