It says it meets or exceeds but doesn't say that it is approved. I know from the VOA's and UOA's it's fine for my GTI 2.0T but still...is it approved?
GC isn't 502.00 approved is it?

It's not on the official list (unless you can prove that it's Formula SLX, which is on the list), but you can buy it at my VW/Audi dealership. If your dealer sells it, I wouldn't worry about it.
GC meets VW 503.01; which is a higher approval than 502.
-503.01 is recommended by Audi for turbocharged petrol cars with more than ~180hp

VW 502.00 approved? Technically, an argument could be made that GC is not; BUT, you will search in vain for ANY documented case where VWOA has denied warranty coverage where GC has been used in a vehicle where a VW 502.00 rated oil is specified.
