Filters, bypass, and break-in

I have to believe this has been covered before, but apparently I suck at searching. This isn't really for a race engine, but it could be; it's a 350 Chevy for my truck. I'd like all the oil to go through the filter (the engine isn't perfectly clean, but I've been told I'm being too picky), but I'd rather have dirty oil than a filter blowing off the engine or something horrible like that. Should I plug the oil filter bypass? I was planning on using a Purolator L34631, which has its own internal bypass that I'm hoping is a little stiffer than GM's 4psi relief.
 
I've decided I must plug the GM bypass, but I found out that the L34631 filter doesn't have an internal bypass. What filter should I use for break-in?
 
AHA! Looks like Baldwin's B279 has 13/16"-16 threads and a 20psi relief valve. (Hastings' LF349 is identical.) Has anyone ever cut one of these manufacturers' filters open? Do they seem to have sufficient filter media area?
