Yep, but 2 variables were changed, oil weight and oil brand. What is the recommended weight for the Sprinter? Why even risk going thinner?

Trending is important. 0w40 previously every 10k. The 0w40 UOA would be relatively accurate/consistent.
The 1st run of ANY new oil should be an early change out rinse run. If the 2nd, 3rd, 4th.... 5w30 Amsoil run is bad, it is the wrong oil for the engine.
Another thing to look at is some wear is greater initially after the oil change. When the 10k+ UOA of this same oil is looked at, hopefully some of the wear will have tapered off. Shorter run for UOA comparison can't be used to draw any conclusions.

IMO, the thinner oil, Amsoil, probably won't improve with time. Engine requires a 40wt.

The Si also needs looking into. With less miles it is considerably higher. What does Si do to the engine? scratch and wear?

So, when looking at numbers, look a little harder before drawing a conclusion.

Find below the UOA for our Sprinter, note that the oil has been changed (Delo 400 15W40 with 2 bottles of Auto-RX)

Consult with Terry Dyson, Dyson Analysis (Site Sponser - Click on Add). He is very reasonable and can likely point you in the right direction quickly. I dont know enough about these Light Duty Euro Diesels to even hazard a guess.
