E30 M3 looks like the current winner. where do I find one?

I would check out www.bmwcca.org, check the classifieds, and the classifieds in Roundel. Get in touch with the local chapter. But it really depends what you want to do. You may find one partially or completely race-prepped this way, possibly with the 2.5L upgrade already done. Or just a mint stock one (But this is for a race car so I wouldn't go that way)

If you want to prep it and rebuild motor yourself, I would probably just go the normal routes for a used car. Buying from BMWCCA members will demand a premium. But then again, they still may have one that is a little worn that they don't want anymore....
 
local autotrader-type magazines.

Typically they are found in the free rack at the entrances/exits of supermarkets.

newspaper classifieds are pretty good too.

The back of the SCCA's magazine "Sportscar" has a classified section, so you could even find a turnkey car.
