Does anyone know what weight this stuff is?

Also, I'm going to have the front end of the bike apart to replace the steering stem bearings. Is it ok to just open the tops of the forks, and pour out (and measure) the old fluid and replace it with new?

oh, it's a '93 VFR750 if that matters.

Sometimes there is a screw at the bottom of the fork to drain the fluid. When you take the cap off the top of the fork make sure all the weight of the bike is off of the forks or your springs will go flying.
 
When I bought the bike there was a copy of a Cycle World Magazine tech article explaining how the stock stem bearings were plastic caged steel ball bearings. Apparently the plastic cages get groves in them and cause some headshake at high speeds. There's a tapered roller bearing kit that replaces the stock bearings to fix the problem, I'm going that route.

Does anybody know if the [stock] bottom bearing race is pressed on the the stem? And if so, how to remove it?
