Many vehicles comes with a buttom that allows the user to manually adjust the height level of the low beam lights. That usually have 4 or 5 position levels. (i.e. Jeep Wrangler).

I want to know how that works on vehicle with projector headlights, if the bulb moves with the socket or the reflector inside of the projectors is the one that moves when you change the level.

The projector and bulb are precision optical instruments. The whole assembly moves, usually on a pivot-motor on the back of the assembly.
