Everyone always talks about how the entire vehicle is being held up by a 50 cent o ring in the jack. Is it hard to periodically replace that o ring?

probably quite easy but I would think, if it ain't broke, leave it alone. The o-ring is compatible with the fluid and never sees UV so it will last easily 20 years. The jack I have is from the early 1970's and all I did recently was add a bit of fluid. So I suppose it has a small leak but I cannot detect where.

"if it ain't broke, leave it alone" Amen. I have a Craftsman jack from 1978 that's still going strong after many years of hard use and being dragged to the race track. Lift the car, put it on jack stands, let the jack down.
