Venison

Venison chili is definitely good. If it's being eaten as a steak, rare is good. Cooking it too much generally doesn't come out great. Braising it works very well if you want it cooked through.
 
We eat a lot of wild game. I just finished up processing this years Elk. I also have this years Mule deer in the freezer.

I don't specifically target Black Bear or Cougar but always have a tag for each in my pocket while deer and Elk hunting. Both are delicious.

I rarely eat game meats. I find them...well...gamey. I guess because I wasn't raised on it.
I would enjoy trying some of that Alaskan game though. I've never had moose. About the only game I've regularly had from Alaska is the salmon. And that's almost always very good.
